Almond Croissant Baked Oatmeal

Ingredients
  

  • 2 cups old -fashioned rolled oats
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups unsweetened almond milk
  • 2 large egg s
  • 1/4 cup maple syrup
  • 1 teaspoon pure almond extract
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted unsalted butter
  • 1/4 cup sliced almonds
  • 1/4 cup creamy almond butter

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease a 9-inch square baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and sea salt.
  3. In a separate bowl, whisk together the almond milk, eggs, maple syrup, almond extract, vanilla extract, and melted butter until homogenous.
  4. Pour the liquid mixture over the dry ingredients and stir until the oats are fully submerged and evenly distributed.
  5. Pour half of the oat mixture into the prepared baking dish.
  6. Drop small dollops of the almond butter evenly across the surface of the first layer.
  7. Pour the remaining oat mixture over the almond butter dollops and smooth the surface with a spatula.
  8. Sprinkle the sliced almonds evenly over the top of the mixture.
  9. Bake for 35 minutes or until the center is firm to the touch and the almonds are golden brown.
  10. Remove from the oven and let sit for 5 to 10 minutes to allow the structure to set before serving.
