Preheat waffle iron to its medium-high setting.
In a large mixing bowl, whisk together the almond flour, baking powder, and salt until no lumps remain.
In a separate bowl, whisk the eggs, almond milk, melted coconut oil, maple syrup, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just incorporated.
Lightly grease the waffle iron with oil spray.
Pour approximately 1/2 cup of batter onto the center of the waffle iron for each waffle.
Close the lid and cook for 4 to 6 minutes, or until the waffle is golden brown and the steam has subsided.
Carefully remove the waffle and repeat with the remaining batter.
