Baked Cottage Cheese Eggs

Ingredients
  

  • 6 large egg s
  • 1 cup small curd cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon fresh chives, minced

Method
 

  1. Preheat oven to 375°F (190°C) and grease an 8-inch square baking dish or 9-inch pie plate with non-stick spray or butter.
  2. In a blender or food processor, combine eggs, cottage cheese, melted butter, salt, pepper, and garlic powder.
  3. Process on high speed for 30 seconds until the mixture is completely smooth and aerated.
  4. Pour the blended egg mixture into the prepared baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.
  6. Bake for 25 to 30 minutes, or until the center is set and the top is lightly golden brown.
  7. Remove from the oven and let rest for 5 minutes to firm up.
  8. Garnish with minced chives and slice into four equal portions for serving.
