Baked Feta Eggs with Tomatoes and Spinach

Ingredients
  

  • 4 large egg s
  • 200 g cherry tomatoes, halved
  • 100 g baby spinach
  • 100 g feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic , minced
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes
  • Salt and black pepper to taste

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. In a medium oven-proof skillet or baking dish, toss cherry tomatoes and minced garlic with olive oil, oregano, and red pepper flakes.
  3. Roast the tomatoes for 10 minutes until they start to burst.
  4. Remove the skillet from the oven and stir in the baby spinach until it begins to wilt from the residual heat.
  5. Create four small wells in the tomato and spinach mixture using the back of a spoon.
  6. Crack one egg into each well and sprinkle the crumbled feta cheese around the eggs.
  7. Return the skillet to the oven and bake for 8 to 12 minutes, or until the egg whites are set but the yolks remain runny.
  8. Season with freshly ground black pepper and serve immediately.
