Black Bean and Corn Salad

Ingredients
  

  • 15 oz canned black beans, rinsed and drained
  • 15 oz canned sweet corn, drained
  • 1 red bell pepper, diced
  • 0.5 cup red onion, finely diced
  • 0.5 cup fresh cilantro, chopped
  • 1 jalape ño, seeded and minced
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper

Method
 

  1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, lime juice, cumin, and chili powder until well combined.
  3. Pour the dressing over the salad and toss thoroughly to ensure even distribution.
  4. Season with salt and black pepper to taste.
  5. Refrigerate for at least 30 minutes to allow the flavors to develop before serving.
