Blueberry Tahini Dressing

Ingredients
  

  • 1/2 cup fresh blueberries
  • 1/4 cup runny tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons wate r

Method
 

  1. Place the fresh blueberries, tahini, lemon juice, maple syrup, apple cider vinegar, and salt into a high-speed blender.
  2. Process on high speed until the mixture is completely smooth and the blueberries are fully incorporated.
  3. Add water one tablespoon at a time while pulsing until the dressing reaches the desired pouring consistency.
  4. Taste and adjust seasoning with additional salt or lemon juice if necessary.
  5. Transfer to an airtight container and refrigerate for up to 5 days.
