Chicken Bacon Ranch Lettuce Boats

Ingredients
  

  • 2 cups cooked chicken breast, diced
  • 6 slices bacon , cooked and crumbled
  • 1/2 cup ranch dressing
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup green onions, thinly sliced
  • 1/2 cup cherry tomatoes, quartered
  • 8 large Romaine or Butter lettuce leaves
  • 1/4 teaspoon ground black pepper

Method
 

  1. In a large mixing bowl, combine the diced cooked chicken, crumbled bacon, ranch dressing, and black pepper.
  2. Fold in the shredded cheddar cheese and green onions until the mixture is well combined.
  3. Lay the clean, dry lettuce leaves flat on a clean surface or serving platter.
  4. Spoon equal portions of the chicken mixture into the center of each lettuce leaf.
  5. Garnish each boat with quartered cherry tomatoes.
  6. Serve immediately to maintain the crispness of the lettuce.
