Chicken Caesar Sandwiches

Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 ciabatta rolls , split horizontally
  • 1/2 cup creamy Caesar dressing
  • 1/4 cup shaved Parmesan cheese
  • 2 cups romaine lettuce, shredded
  • 1 tablespoon unsalted butter, softened

Method
 

  1. Season the chicken breasts with olive oil, salt, and black pepper.
  2. Heat a grill pan or cast-iron skillet over medium-high heat and cook the chicken for 6 to 7 minutes per side until the internal temperature reaches 165F (74C).
  3. Transfer chicken to a cutting board and allow it to rest for 5 minutes before slicing into thin strips.
  4. Spread butter on the cut sides of the ciabatta rolls and toast them in a skillet or under a broiler until golden brown.
  5. In a medium mixing bowl, toss the shredded romaine lettuce with 1/4 cup of the Caesar dressing and the shaved Parmesan cheese.
  6. Spread the remaining Caesar dressing onto the bottom halves of the toasted rolls.
  7. Layer the sliced chicken onto the rolls and top with a generous portion of the dressed romaine salad.
  8. Close the sandwiches with the top halves of the rolls and serve immediately.
