Chicken Taco Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic , minced
  • 1 lb cooked chicken breast, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 packet (1 oz) taco seasoning
  • 4 cups low -sodium chicken broth
  • 1 tsp lime juice

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until translucent, approximately 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add black beans, corn, diced tomatoes, tomato sauce, and taco seasoning. Stir to combine.
  5. Pour in chicken broth and bring the mixture to a boil.
  6. Reduce heat to low and simmer for 15 minutes.
  7. Stir in shredded chicken and lime juice, then heat through for an additional 2-3 minutes.
  8. Serve hot with optional garnishes like avocado, cheese, or tortilla strips.
