Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 0.25 cup fresh cilantro, finely chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic , minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon cracked black pepper

Method
 

  1. In a medium mixing bowl, whisk together the lime juice, olive oil, minced garlic, chopped cilantro, cumin, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow glass dish and pour the marinade over the meat, ensuring even coating.
  3. Refrigerate and marinate for a minimum of 30 minutes, or up to 4 hours for maximum flavor penetration.
  4. Preheat a cast iron skillet or outdoor grill to medium-high heat, approximately 400 degrees Fahrenheit.
  5. Place the chicken on the heated surface and cook for 6 to 8 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit using a probe thermometer.
  6. Transfer the chicken to a clean plate and allow it to rest for 5 minutes before slicing or serving to ensure juice retention.
