Method
- Peel the clementines and remove as much of the white pith as possible.
- Place the clementine segments, Greek yogurt, almond milk, honey, and vanilla extract into a high-speed blender.
- Add the ice cubes to the blender carafé.
- Blend on high speed for 45 to 60 seconds until the mixture is completely smooth and emulsified.
- Pour into a chilled glass and serve immediately.
