Ingredients
  

  • 3 large ripe bananas, mashed
  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 2 cups all -purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sal t
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Whisk in the cottage cheese, eggs, vanilla extract, and maple syrup until well combined.
  4. In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet ingredients until just incorporated; do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
