Cottage Cheese Buffalo Chicken Dip

Ingredients
  

  • 2 cups low -fat cottage cheese
  • 2 cups cooked shredded chicken breast
  • 1/2 cup buffalo hot sauce
  • 1/2 cup shredded low-moisture mozzarella cheese
  • 1/4 cup crumbled blue cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons chopped green onions

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Place the cottage cheese into a blender or food processor and pulse until the texture is completely smooth and creamy.
  3. In a large mixing bowl, combine the blended cottage cheese, shredded chicken, buffalo hot sauce, garlic powder, and onion powder.
  4. Stir in 1/4 cup of the shredded mozzarella cheese until well incorporated.
  5. Transfer the mixture into a 1-quart oven-safe baking dish and spread into an even layer.
  6. Sprinkle the remaining mozzarella cheese and the blue cheese crumbles over the top.
  7. Bake for 20 to 25 minutes until the dip is heated through and the cheese on top is melted and bubbling.
  8. Remove from the oven and garnish with chopped green onions before serving.
