Ingredients
  

  • 2 cups cooked chicken breast, diced
  • 1 cup small curd cottage cheese
  • 1/2 cup celery , finely diced
  • 1/4 cup red onion, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh chives, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. In a medium mixing bowl, combine the cottage cheese, Dijon mustard, and lemon juice.
  2. Season the mixture with salt and black pepper, stirring until the texture is uniform.
  3. Add the diced chicken breast, celery, and red onion to the bowl.
  4. Fold the ingredients together until the chicken is evenly coated in the cottage cheese dressing.
