Ingredients
  

  • 1 cup low -fat cottage cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups almond flour
  • 1/4 cup mini semi-sweet chocolate chips
  • 1/8 teaspoon fine sea salt

Method
 

  1. Place the cottage cheese, maple syrup, and vanilla extract in a high-speed blender or food processor.
  2. Blend on high for 30 to 60 seconds until the mixture is completely smooth and no lumps remain.
  3. Transfer the blended mixture into a medium mixing bowl.
  4. Add the almond flour and sea salt to the bowl and stir until a cohesive, thick dough forms.
  5. Gently fold in the mini chocolate chips until evenly distributed.
  6. Serve immediately or chill in the refrigerator for 20 minutes to achieve a firmer consistency.
