Ingredients
  

  • 1 cup cottage cheese, small curd and well-drained
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large eg g
  • 1 teaspoon vanilla extract
  • 2 cups all -purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon sal t

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the drained cottage cheese until evenly distributed.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spaced 2 inches apart.
  8. Bake for 12 to 15 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
