Cottage Cheese Egg Bake

Ingredients
  

  • 8 large egg s
  • 2 cups small curd cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup all -purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 2-quart baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk the eggs until smooth.
  3. Add cottage cheese, shredded cheddar, flour, baking powder, salt, pepper, and chives to the eggs and stir until thoroughly combined.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 35 to 40 minutes until the top is golden and the center is set.
  6. Remove from oven and let rest for 5 to 10 minutes before slicing.
