Add cottage cheese, eggs, garlic powder, oregano, and black pepper to a high-speed blender or food processor.
Process on high for 30 to 45 seconds until the mixture is completely smooth and no curds remain.
Pour the liquid mixture onto the center of the parchment-lined baking sheet and spread with a spatula into an even rectangle approximately 1/4 inch thick.
Bake for 30 to 35 minutes until the surface is golden brown and the flatbread feels firm and set.
Remove from the oven and allow to cool on the baking sheet for 10 minutes to allow the structure to stabilize.
Carefully peel the flatbread away from the parchment paper and use as a wrap or sandwich base.
