Cottage Cheese Jalapeño Popper Dip

Ingredients
  

  • 16 oz low -fat cottage cheese
  • 4 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 3 large jalape ños, seeded and finely diced
  • 4 slices cooked bacon, crumbled
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon sal t
  • 1/4 cup Panko breadcrumbs
  • 1 tablespoon unsalted butter, melted

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Place cottage cheese in a blender or food processor and pulse until completely smooth.
  3. In a large mixing bowl, combine the smooth cottage cheese, softened cream cheese, shredded cheddar, diced jalapeños, bacon crumbles, garlic powder, onion powder, and salt.
  4. Transfer the mixture into a 1-quart oven-safe baking dish and spread into an even layer.
  5. In a small bowl, mix the Panko breadcrumbs with the melted butter until moistened.
  6. Sprinkle the breadcrumb mixture evenly over the top of the dip.
  7. Bake for 20 to 25 minutes until the dip is bubbling and the topping is golden brown.
  8. Remove from oven and let stand for 5 minutes before serving.
