Ingredients
  

  • 2 cups low -fat cottage cheese
  • 4 ounces smoked salmon, cut into 1-inch ribbons
  • 1 large ripe avocado, pitted and diced into 1/2-inch cubes
  • 1/4 cup English cucumber, finely diced
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon freshly cracked black pepper

Method
 

  1. Place the cottage cheese into a chilled medium-sized mixing bowl.
  2. Add the diced avocado and diced cucumber to the bowl.
  3. Gently incorporate the smoked salmon ribbons, dill, and chives.
  4. Drizzle the fresh lemon juice over the mixture and season with the cracked black pepper.
  5. Using a silicone spatula, fold the ingredients together gently to ensure even distribution without mashing the avocado cubes.
  6. Portion the salad into two serving bowls and serve immediately while cold.
