Ingredients
  

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 3 large egg s
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 pinch kosher salt
  • Cooking spray or melted butter for the iron

Method
 

  1. Preheat the waffle iron to medium-high heat and apply non-stick cooking spray.
  2. Place cottage cheese, rolled oats, eggs, baking powder, vanilla extract, maple syrup, and salt into a high-speed blender.
  3. Process the mixture on high speed until the batter is completely smooth and homogeneous, approximately 45 to 60 seconds.
  4. Pour 1/2 cup of batter onto the preheated waffle iron.
  5. Close the lid and cook for 3 to 5 minutes until the steam subsides and the waffle is golden brown and crisp.
  6. Carefully remove the waffle using a silicone spatula and repeat the process with the remaining batter.
  7. Serve immediately to maintain texture.
