Creamy Avocado Dressing

Ingredients
  

  • 1 large ripe avocado, pitted and peeled
  • 1/4 cup plain Greek yogurt
  • 1/4 cup fresh cilantro, packed
  • 1 clove garlic , minced
  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons wate r

Method
 

  1. Combine avocado, Greek yogurt, cilantro, garlic, lime juice, olive oil, cumin, salt, and pepper in a food processor or blender.
  2. Pulse until the ingredients are chopped and partially combined.
  3. Process on high speed for 45 seconds or until the mixture is completely smooth and emulsified.
  4. Stream in water 1 tablespoon at a time while processing until the desired pouring consistency is reached.
  5. Taste and adjust seasoning with additional salt or lime juice as required.
  6. Transfer to a chilled container and refrigerate until ready to use.
