Easy Cucumber Sandwiches

Ingredients
  

  • 8 slices soft white bread
  • 1 medium English cucumber, thinly sliced
  • 4 ounces cream cheese, softened
  • 1 tablespoon mayonnais e
  • 1 teaspoon fresh dill, finely chopped
  • 1 teaspoon fresh chives, finely chopped
  • 1/2 teaspoon lemon juice
  • Salt and black pepper to taste

Method
 

  1. In a small mixing bowl, blend the softened cream cheese, mayonnaise, dill, chives, and lemon juice until the mixture is uniform.
  2. Taste and season the herbed cream cheese with salt and pepper.
  3. Spread approximately one tablespoon of the mixture onto one side of each slice of bread, ensuring coverage to the edges.
  4. Arrange cucumber slices in a single, slightly overlapping layer on four of the bread slices.
  5. Place the remaining bread slices on top, spread-side down, to close the sandwiches.
  6. Using a serrated knife, trim the crusts from the sandwiches.
  7. Cut each sandwich into four triangles or three rectangles and serve immediately.
