- Wash the kale and pat thoroughly dry.
- In a large mixing bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
- Add the chopped kale leaves to the bowl.
- Massage the kale with clean hands for 3 to 5 minutes until the leaves become soft, dark green, and reduced in volume.
- Add the dried cranberries, toasted pumpkin seeds, and shaved parmesan.
- Toss all ingredients together and serve immediately or refrigerate.
