Easy Kale Salad

Ingredients
  

  • 1 large bunch curly kale, stems removed and leaves chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup dried cranberries
  • 1/4 cup toasted pumpkin seeds
  • 1/4 cup shaved parmesan cheese

Method
 

  1. Wash the kale and pat thoroughly dry.
  2. In a large mixing bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  3. Add the chopped kale leaves to the bowl.
  4. Massage the kale with clean hands for 3 to 5 minutes until the leaves become soft, dark green, and reduced in volume.
  5. Add the dried cranberries, toasted pumpkin seeds, and shaved parmesan.
  6. Toss all ingredients together and serve immediately or refrigerate.
