Ingredients
  

  • 2 medium zucchini , sliced into 0.5-inch thick rounds
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese

Method
 

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Line a large rimmed baking sheet with parchment paper.
  3. In a large mixing bowl, combine the zucchini slices, olive oil, salt, pepper, and garlic powder.
  4. Toss the ingredients until the zucchini is evenly coated with oil and seasonings.
  5. Arrange the zucchini rounds in a single layer on the prepared baking sheet, ensuring no overlap for even airflow.
  6. Roast for 12 to 15 minutes, or until the zucchini is tender and the edges are golden brown.
  7. Remove from the oven and sprinkle with grated parmesan cheese while hot.
