Easy Strawberry Banana Baked Oatmeal

Ingredients
  

  • 2 cups old -fashioned rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sal t
  • 1 1/2 cups milk of choice
  • 2 medium ripe bananas, mashed
  • 1 large eg g
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 1/2 cups fresh strawberries, sliced

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a large bowl, whisk together the mashed bananas, egg, milk, maple syrup, and vanilla extract until well combined.
  3. Stir in the oats, baking powder, cinnamon, and salt.
  4. Gently fold in 1 cup of the sliced strawberries.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Top with the remaining 1/2 cup of strawberries.
  7. Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
  8. Allow to cool for 5-10 minutes before serving.
