Easy Vegetarian Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic , minced
  • 1 medium bell pepper, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 28 ounces crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 teaspoon sal t
  • 1/4 teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper and sauté for 5 to 7 minutes until softened.
  3. Stir in chili powder and cumin and cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes, vegetable broth, black beans, and kidney beans.
  5. Bring to a boil, then reduce heat to low and simmer for 20 to 25 minutes.
  6. Season with salt and black pepper to taste and serve hot.
