Egg Roll Bowls with Chicken and Cabbage

Ingredients
  

  • 1 lb ground chicken
  • 1 tablespoon sesame oil
  • 2 cloves garlic , minced
  • 1 tablespoon fresh ginger, grated
  • 14 ounces coleslaw mix (cabbage and carrots)
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 green onions , thinly sliced
  • 1 teaspoon toasted sesame seeds

Method
 

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground chicken and cook until fully browned, breaking into small crumbles with a spatula.
  3. Stir in garlic and ginger and sauté for 1 minute until fragrant.
  4. Add the coleslaw mix, soy sauce, and rice vinegar to the skillet.
  5. Sauté the mixture for 5 to 7 minutes, stirring frequently, until the cabbage is wilted and tender.
  6. Remove from heat and stir in the sliced green onions.
  7. Garnish with sesame seeds before serving.
