Egg White Frittata

Ingredients
  

  • 1.5 cups liquid egg whites
  • 1 cup baby spinach, chopped
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 0.25 teaspoon sal t
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon fresh chives, minced

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk egg whites with salt and pepper until slightly frothy.
  3. Heat olive oil in a 10-inch oven-proof skillet over medium heat.
  4. Add spinach and sauté until wilted, approximately 2 minutes.
  5. Pour egg whites into skillet and distribute spinach evenly.
  6. Arrange cherry tomatoes and feta cheese over the top.
  7. Cook on stovetop for 2 minutes until edges begin to set.
  8. Transfer skillet to oven and bake for 10 to 12 minutes until the center is set.
  9. Garnish with chives and serve immediately.
