Line a baking sheet or tray with parchment paper.
In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract.
Whisk the ingredients until the mixture is completely smooth and homogeneous.
Use a tablespoon or small scoop to drop 12 even mounds of the mixture onto the prepared parchment paper.
Press a few mini chocolate chips into the top of each mound.
Place the tray in the freezer for a minimum of 2 hours or until the bites are firm to the touch.
Remove from parchment and store in an airtight container in the freezer until ready to serve.
