Thoroughly wash and pat dry the strawberries and blueberries.
Slice the strawberries into uniform 0.25-inch pieces.
Place 0.5 cup of Greek yogurt into the bottom of a clean 12-ounce glass or parfait jar.
Distribute half of the strawberries and blueberries evenly over the yogurt layer.
Sprinkle 2 tablespoons of granola over the fruit.
Layer the remaining 0.5 cup of yogurt on top of the granola.
Add the remaining strawberries and blueberries to the second yogurt layer.
Top with the remaining 2 tablespoons of granola.
Drizzle clover honey over the top layer and garnish with a fresh mint sprig.
