Fudgy Black Bean Brownies

Ingredients
  

  • 1 can (15 oz) black beans, drained and thoroughly rinsed
  • 2 large egg s
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1/2 cup semi -sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. Place the rinsed black beans, eggs, cocoa powder, maple syrup, coconut oil, vanilla, baking powder, and salt into a food processor or high-speed blender.
  3. Pulse and blend until the mixture is completely smooth and no bean skins are visible.
  4. Stir in the chocolate chips by hand using a spatula.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 25 to 30 minutes, or until the edges are firm and a toothpick inserted into the center comes out mostly clean.
  7. Allow the brownies to cool completely in the pan before slicing to ensure the texture sets properly.
