Garlic Butter Beef Rice

Ingredients
  

  • 500 g flank steak, thinly sliced against the grain
  • 3 cups cooked jasmine rice, chilled
  • 4 tablespoons unsalted butter, divided
  • 6 cloves garlic , minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 2 green onions , thinly sliced

Method
 

  1. Heat vegetable oil in a large skillet or wok over high heat until shimmering.
  2. Add beef strips in a single layer and sear for 1-2 minutes per side until browned; remove beef and set aside.
  3. Reduce heat to medium and add 2 tablespoons of butter to the skillet.
  4. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Add chilled rice to the skillet, using a spatula to break up any clumps.
  6. Drizzle soy sauce and oyster sauce over the rice, then season with black pepper.
  7. Increase heat to medium-high and stir-fry the rice for 3 minutes until lightly toasted.
  8. Return the beef to the skillet and add the remaining 2 tablespoons of butter.
  9. Toss all ingredients together for 1 minute until the butter is melted and the beef is heated through.
  10. Remove from heat and garnish with sliced green onions before serving.
