Garlic Chicken Zucchini Noodles Stir Fry

Ingredients
  

  • 2 medium zucchini , spiralized into noodles
  • 1 lb chicken breast, cut into bite-sized pieces
  • 3 cloves garlic , minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon toasted sesame seeds

Method
 

  1. Spiralize the zucchini and pat dry with paper towels to remove excess moisture.
  2. Season chicken pieces with salt and pepper.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  4. Add chicken to the skillet and cook until browned and cooked through, approximately 5 to 7 minutes. Remove chicken and set aside.
  5. Add the remaining 1 tablespoon of olive oil to the same skillet. Add minced garlic and red pepper flakes; sauté for 30 seconds until fragrant.
  6. Add zucchini noodles to the skillet and toss frequently for 2 to 3 minutes until slightly softened but still al dente.
  7. Return the cooked chicken to the skillet.
  8. Pour in the soy sauce and sesame oil.
  9. Toss all ingredients together for 1 minute until well combined and heated through.
  10. Garnish with sesame seeds and serve immediately.
