Garlic Parmesan Chicken Meatloaf

Ingredients
  

  • 2 lbs ground chicken
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs , beaten
  • 4 cloves garlic , minced
  • 1/4 cup fresh Italian parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup whole milk

Method
 

  1. Preheat oven to 375 degrees F (190 degrees C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, combine the ground chicken, breadcrumbs, parmesan, eggs, garlic, parsley, oregano, salt, pepper, and milk.
  3. Mix the ingredients by hand until just incorporated, being careful not to overwork the meat.
  4. Press the mixture into the prepared loaf pan and level the surface.
  5. Bake for 45 to 50 minutes until the internal temperature reaches 165 degrees F (74 degrees C).
  6. Remove from oven and allow the meatloaf to rest for 10 minutes before slicing.
