Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh baby spinach, finely chopped
  • 1/4 cup red onion, finely minced
  • 2 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 4 brioche buns or pita rounds
  • 1/2 cup tzatziki sauce
  • 1/2 cucumber , thinly sliced
  • 1 medium tomato , sliced

Method
 

  1. In a large mixing bowl, combine the ground chicken, crumbled feta, chopped spinach, red onion, garlic, oregano, lemon zest, salt, and pepper.
  2. Form the mixture into four equal-sized patties, approximately 3/4-inch thick.
  3. Heat the olive oil in a non-stick skillet or grill pan over medium-high heat.
  4. Place the patties in the pan and cook for 5 to 6 minutes per side.
  5. Verify the internal temperature has reached 165°F (74°C) using an instant-read thermometer.
  6. Remove the patties from heat and let rest for 2 minutes.
  7. Toast the buns lightly and spread a generous tablespoon of tzatziki on each.
  8. Assemble the burgers by placing the chicken patty on the bun and topping with cucumber and tomato slices.
