Grilled Teriyaki Tofu Skewers with Fresh Pineapple

Ingredients
  

  • 14 ounces extra -firm tofu, pressed and cut into 1-inch cubes
  • 2 cups fresh pineapple, cut into 1-inch chunks
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1/2 cup teriyaki sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic , minced
  • 2 tablespoons green onions, thinly sliced

Method
 

  1. Press the tofu for 30 minutes to remove excess moisture before cutting into cubes.
  2. In a medium bowl, whisk together the teriyaki sauce, sesame oil, ginger, and garlic.
  3. Place the tofu cubes in a shallow dish and pour half of the sauce mixture over them, marinating for at least 15 minutes.
  4. Thread the tofu, pineapple chunks, and bell pepper pieces onto skewers in an alternating pattern.
  5. Preheat a grill or grill pan to medium-high heat and lightly grease the surface with oil.
  6. Place the skewers on the grill and cook for 8-10 minutes, rotating occasionally until the tofu is charred and the vegetables are tender.
  7. Brush the remaining teriyaki sauce onto the skewers during the last 2 minutes of grilling.
  8. Remove from the heat and garnish with sliced green onions prior to serving.
