Preheat oven to 400 degrees Fahrenheit.
Toss sweet potato cubes with 1 tablespoon olive oil and a pinch of salt and pepper on a rimmed baking sheet.
Roast sweet potatoes for 20 minutes until they begin to soften.
While potatoes roast, brown ground turkey in a large skillet over medium-high heat until no longer pink.
Add remaining olive oil, onion, and bell pepper to the skillet and cook for 5 minutes until vegetables soften.
Stir in garlic, smoked paprika, oregano, salt, and pepper and cook for 1 minute until fragrant.
Combine roasted sweet potatoes and turkey mixture in a 2-quart baking dish.
Top with shredded cheddar cheese.
Bake for 15 minutes or until the cheese is melted and bubbly.
Garnish with fresh parsley and serve immediately.
