Ground Turkey Zucchini Skillet

Ingredients
  

  • 1 lb lean ground turkey
  • 2 medium zucchinis , sliced into half-moons
  • 1 small yellow onion, diced
  • 3 cloves garlic , minced
  • 1 can (14.5 oz) petite diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon paprik a
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella cheese

Method
 

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add ground turkey and diced onion to the skillet. Cook until turkey is browned and onions are translucent, breaking up the meat with a spatula.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the sliced zucchini, drained tomatoes, oregano, paprika, salt, and pepper to the pan.
  5. Stir to combine, then cover and cook for 8 to 10 minutes over medium heat until zucchini is tender.
  6. Remove the lid, sprinkle shredded mozzarella cheese over the mixture, and cover for 1 additional minute until melted.
  7. Remove from heat and serve immediately.
