Add ground turkey and diced onion to the skillet. Cook until turkey is browned and onions are translucent, breaking up the meat with a spatula.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the sliced zucchini, drained tomatoes, oregano, paprika, salt, and pepper to the pan.
Stir to combine, then cover and cook for 8 to 10 minutes over medium heat until zucchini is tender.
Remove the lid, sprinkle shredded mozzarella cheese over the mixture, and cover for 1 additional minute until melted.
Remove from heat and serve immediately.
