Healthy Applesauce Muffins

Ingredients
  

  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon sal t
  • 1 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 large eg g
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the applesauce, maple syrup, melted coconut oil, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Do not overmix.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
