Healthy Avocado Chicken Salad

Ingredients
  

  • 2 large boneless skinless chicken breasts, cooked and shredded
  • 2 ripe avocados , pitted and cubed
  • 0.5 cup red onion, finely diced
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic , minced
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Method
 

  1. Combine the shredded chicken and diced red onion in a large mixing bowl.
  2. In a separate small bowl, mash half of the avocado cubes with the lime juice, olive oil, minced garlic, salt, and pepper until relatively smooth.
  3. Transfer the avocado mash into the large bowl with the chicken and onion.
  4. Add the remaining cubed avocado and chopped cilantro to the bowl.
  5. Gently fold all ingredients together using a rubber spatula until the chicken is evenly coated, taking care not to completely mash the remaining avocado chunks.
  6. Serve immediately or refrigerate in an airtight container for up to 2 hours.
