Healthy Gingerbread Men

Ingredients
  

  • 3 cups whole wheat pastry flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sal t
  • 1/2 cup melted coconut oil
  • 1/2 cup unsulphured molasses
  • 1 large eg g
  • 1/4 cup maple syrup

Method
 

  1. Whisk flour, ginger, cinnamon, cloves, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk coconut oil, molasses, egg, and maple syrup until smooth.
  3. Gradually fold dry ingredients into wet ingredients until a dough forms.
  4. Wrap dough in parchment paper and refrigerate for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  6. Roll dough to 1/4 inch thickness on a floured surface.
  7. Cut into shapes using a gingerbread man cutter and place on sheets.
  8. Bake for 8-10 minutes until edges are firm.
  9. Cool completely on a wire rack before decorating.
