Healthy Greek Ground Chicken Bowls

Ingredients
  

  • 1 lb ground chicken
  • 2 tablespoons olive oil
  • 3 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 cups cooked white or brown rice
  • 1 cup English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup kalamata olives, pitted and sliced
  • 0.25 cup crumbled feta cheese
  • 0.5 cup tzatziki sauce

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spatula, until browned and cooked through (about 7-10 minutes).
  3. Stir in minced garlic, dried oregano, salt, and pepper; cook for 1 minute until fragrant.
  4. Remove from heat and stir in lemon juice.
  5. In four serving bowls, divide the cooked rice evenly.
  6. Top each bowl with a portion of the seasoned ground chicken.
  7. Arrange cucumber, tomatoes, red onion, and kalamata olives around the chicken.
  8. Garnish with crumbled feta cheese and a dollop of tzatziki sauce.
