Healthy Lemon Bars

Ingredients
  

  • 2 cups almond flour
  • 1/4 cup melted coconut oil
  • 3 tablespoons maple syrup
  • 1/4 teaspoon sea salt
  • 3 large egg s
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/3 cup hone y
  • 2 tablespoons coconut flour

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, combine almond flour, melted coconut oil, maple syrup, and sea salt until a dough forms.
  3. Press the dough firmly into the bottom of the prepared pan.
  4. Bake the crust for 12-15 minutes or until the edges are lightly golden brown.
  5. While the crust bakes, whisk together eggs, lemon juice, lemon zest, honey, and coconut flour in a bowl until smooth.
  6. Remove the crust from the oven and pour the lemon filling over the warm crust.
  7. Return to the oven and bake for an additional 18-20 minutes until the center is set.
  8. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing into squares.
