Healthy Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 2 cups old -fashioned rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1/2 cup pure maple syrup
  • 1 large eg g
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (70% cacao)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, whole wheat flour, baking soda, cinnamon, and salt.
  3. In a separate medium bowl, combine the applesauce, melted coconut oil, maple syrup, egg, and vanilla extract until emulsified.
  4. Incorporate the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the dark chocolate chips.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Flatten each cookie slightly with the back of a spoon to the desired thickness.
  8. Bake for 10 to 12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack for final cooling.
