- Whisk eggs in a large bowl.
- Whisk until they are frothy.

- Fold in the chopped spinach.

- Pour mixture into the cups.
- Fill them about 3/4 full.
- Sprinkle cheese on each muffin.
- Bake for 18 to 22 minutes.
- Ensure the eggs feel firm.
- Let them cool for five minutes.
- Loosen the edges with a knife.
- Remove them from the pan.
