Healthy Turkey Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 lb lean ground turkey
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic , minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (28 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 cup low -sodium chicken broth
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground turkey and cook until browned, breaking it into small crumbles with a spatula.
  3. Add diced onion and bell pepper to the pot; cook for 5 minutes until softened.
  4. Stir in minced garlic, chili powder, cumin, paprika, oregano, and cayenne; cook for 1 minute until fragrant.
  5. Stir in tomato paste until well incorporated with the meat and vegetables.
  6. Add crushed tomatoes, black beans, kidney beans, and chicken broth; stir to combine.
  7. Bring the mixture to a boil, then reduce heat to low and simmer, partially covered, for 30 to 40 minutes.
  8. Season with salt and pepper to taste before serving.
