Healthy Turkey Ricotta Meatballs

Ingredients
  

  • 1 lb ground turkey (93% lean)
  • 1/2 cup low -fat ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup whole wheat breadcrumbs
  • 1 large egg , lightly beaten
  • 2 cloves garlic , minced
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 2 tbsp fresh Italian parsley, finely chopped

Method
 

  1. Preheat oven to 400°F (204°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, ricotta cheese, Parmesan, breadcrumbs, egg, garlic, oregano, salt, pepper, and parsley.
  3. Mix the ingredients by hand until just incorporated, being careful not to overwork the meat which can lead to toughness.
  4. Form the mixture into approximately 16 to 20 golf-ball-sized meatballs (about 1.5 inches in diameter).
  5. Arrange the meatballs on the prepared baking sheet, ensuring they do not touch.
  6. Bake for 18 to 20 minutes, or until the internal temperature reaches 165°F (74°C) and the surfaces are lightly browned.
  7. Remove from oven and let rest for 3 minutes before serving.
