Ingredients
  

  • 2 slices whole -grain sprouted bread
  • 1 cup low -fat cottage cheese
  • 1/2 cup fresh blueberries
  • 1 tablespoon balsamic glaze
  • 1 teaspoon hone y
  • 1/4 teaspoon ground cinnamon
  • 4 fresh mint leaves, thinly sliced

Method
 

  1. Place bread slices in a toaster or under a broiler until golden brown and firm.
  2. In a small non-stick skillet over medium heat, combine the blueberries and balsamic glaze.
  3. Heat the blueberries for 3 to 5 minutes, stirring occasionally, until the skins begin to burst and the glaze becomes syrupy.
  4. Spread 1/2 cup of cottage cheese onto each slice of warm toast, creating an even layer.
  5. Spoon the warm balsamic blueberry mixture over the cottage cheese.
  6. Finish with a drizzle of honey, a dusting of cinnamon, and fresh mint garnish.
  7. Serve immediately to maintain the temperature contrast between the warm fruit and cold cheese.
