High Protein Chicken and Broccoli Bake

Ingredients
  

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 2 cups fresh broccoli florets
  • 1 cup low -fat cottage cheese
  • 0.5 cup plain non-fat Greek yogurt
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a blender or food processor, combine cottage cheese, Greek yogurt, garlic powder, onion powder, salt, and pepper. Process until completely smooth.
  3. Place the cubed chicken and broccoli florets into the baking dish in an even layer.
  4. Pour the blended cottage cheese mixture over the chicken and broccoli, tossing gently to ensure all pieces are coated.
  5. Distribute the shredded cheddar cheese evenly over the top and sprinkle with smoked paprika.
  6. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly.
  7. Remove from oven and allow to rest for 5 minutes to set the sauce before serving.
